topped with crisply fried silvered onions

Presidential Whitefish

Lake Superior whitefish on a bed of mashed potatoes and

sautéed spinach with Pommery hollandaise

Chicken Champignon

Organic boneless chicken breast,crisply pan roasted and sliced with a brandy mushroom sauce 

Rack of Lamb Dijonnaise 

Rack of Colorado Lamb rolled in a Dijon herb crust,

roasted and presented on a fresh Rosemary scented demi glace

Grilled Organic Salmon Puttanesca 

 Grilled organic salmon nestled in pillow of celery root puree, with an aromatic sauce comprised of olives,

capers, tomatoes, white wine and herbs

Osso Bucco

 Braised veal shank sautéed slowly, with Cabernet demi glace on a bed of risotto Milanese

Veal Valdostana

Medallions of thinly pounded Veal layered with Fontina cheese, sliced Heirloom tomatoes

and fresh basil baked with a lemon caper sauce
