Roast tenderloin of prime beef lined with Foie Gras and wild mushroom
duxelle wrapped in a flaky puff pastry graced with a rich demi glace

 

 

Rack of Lamb

Rack of Colorado lamb, in a Dijon herb crust, roasted and
presented on a fresh Rosemary scented demi glace

 

 

Presidential Whitefish

Fresh Lake Superior whitefish presented on a bed of spinach
and mashed potatoes with a Pommery Hollandaise

 

 

Salmon In Parchment

Filet of organic Scottish salmon wrapped in parchment paper with julienne vegetables,

crème fraiche and aromatic fresh herbs, served tableside

 

 

Roast Ducking

 Bed of wild rice pancake with cherry and thyme demi glaze

 

 

Veal Valdostana

Medallions of thinly pounded Veal, layered with Fontina cheese, sliced
Heirloom tomatoes and fresh basil with a lemon caper sauce

 

 

Prime Boneless Shortribs

Braised succulent shortribs in California Cabernet with tomatoes,
and fresh herbs placed on mashed potatoes with horseradish
crème fraiche topped with slivered fried onions
